Arabic Meat-Filled Skillet Flatbread

Ingredients

Dough

  • 2 cups flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon instant yeast
  • 1/4 teaspoon baking powder
  • 4/3 cup warm water
  • 2 tablespoons corn oil

Filling

  • 300 grams ground meat
  • 1 small onion
  • 1 cup parsley leaves
  • 1 medium tomato
  • 2 tablespoons olive oil
  • 1/2 teaspoon mixed spices
  • 1/2 teaspoon paprika
  • 1/2 teaspoon crushed chili
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup mozzarella or halloumi cheese

For serving

  • Paprika or chili pepper

Preparation

  1. In a bowl, place the flour, salt, sugar, yeast, and baking powder and mix well.

  2. Add the water and oil and knead all the ingredients to get a smooth and homogeneous dough.

  3. Cut the dough into 8 pieces, shape each piece into a ball, cover and leave in a warm place to double in size.

  4. On a floured surface, using a rolling pin, roll out the dough to 9 inches and let it rest for a few minutes.

  5. In a food processor, place the onion, parsley, and tomato, blend until smooth, add to the meat, add the spices, the filling is used raw, spread the filling in a thin layer on the dough and sprinkle some cheese.

  6. Heat a large skillet, place a piece of the flatbread in the skillet, cover with a lid and wait a few minutes for the bottom to brown and the meat to cook, sprinkle paprika then place on a serving plate.

  7. Continue baking the remaining flatbreads in the skillet and stack them on top of each other and cover with a towel to keep them soft and improve the taste.
