Arabic Meat-Filled Skillet Flatbread
Ingredients
Dough
- 2 cups flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 teaspoon instant yeast
- 1/4 teaspoon baking powder
- 4/3 cup warm water
- 2 tablespoons corn oil
Filling
- 300 grams ground meat
- 1 small onion
- 1 cup parsley leaves
- 1 medium tomato
- 2 tablespoons olive oil
- 1/2 teaspoon mixed spices
- 1/2 teaspoon paprika
- 1/2 teaspoon crushed chili
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup mozzarella or halloumi cheese
For serving
- Paprika or chili pepper
Preparation
In a bowl, place the flour, salt, sugar, yeast, and baking powder and mix well.
Add the water and oil and knead all the ingredients to get a smooth and homogeneous dough.
Cut the dough into 8 pieces, shape each piece into a ball, cover and leave in a warm place to double in size.
On a floured surface, using a rolling pin, roll out the dough to 9 inches and let it rest for a few minutes.
In a food processor, place the onion, parsley, and tomato, blend until smooth, add to the meat, add the spices, the filling is used raw, spread the filling in a thin layer on the dough and sprinkle some cheese.
Heat a large skillet, place a piece of the flatbread in the skillet, cover with a lid and wait a few minutes for the bottom to brown and the meat to cook, sprinkle paprika then place on a serving plate.
Continue baking the remaining flatbreads in the skillet and stack them on top of each other and cover with a towel to keep them soft and improve the taste.
