Meat-Filled Arab Flatbread

Ingredients

Dough

  • 2 cups flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon instant yeast
  • 1/4 teaspoon baking powder
  • 3/4 cup warm water
  • 2 tablespoons corn oil

Filling

  • 300 grams ground meat
  • 1 small onion
  • 1 cup parsley leaves
  • 1 medium tomato
  • 2 tablespoons olive oil
  • 1/2 teaspoon mixed spices
  • 1/2 teaspoon paprika
  • 1/2 teaspoon crushed chili
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup mozzarella or halloumi cheese

For serving

  • paprika or chili pepper

Preparation

  1. Mix the flour, salt, sugar, yeast, and baking powder in a bowl until combined.

  2. Add the warm water and corn oil, then knead to form a smooth and homogeneous dough.

  3. Divide the dough into 8 balls, cover, and let rise in a warm place until doubled in size.

  4. On a floured surface, roll each ball into a 9-inch circle and let rest for a few minutes.

  5. Spread the filling in a thin layer over the dough and sprinkle with some cheese.

  6. Heat a large skillet, place one dough in it, cover with a lid, and cook until the bottom browns and the meat is done, then sprinkle with paprika or chili and transfer to a serving plate.

  7. Repeat with the remaining dough, stacking them and covering with a light towel to keep soft, and serve hot.
