Meat-Filled Arab Flatbread
Ingredients
Dough
- 2 cups flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 teaspoon instant yeast
- 1/4 teaspoon baking powder
- 3/4 cup warm water
- 2 tablespoons corn oil
Filling
- 300 grams ground meat
- 1 small onion
- 1 cup parsley leaves
- 1 medium tomato
- 2 tablespoons olive oil
- 1/2 teaspoon mixed spices
- 1/2 teaspoon paprika
- 1/2 teaspoon crushed chili
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup mozzarella or halloumi cheese
For serving
- paprika or chili pepper
Preparation
Mix the flour, salt, sugar, yeast, and baking powder in a bowl until combined.
Add the warm water and corn oil, then knead to form a smooth and homogeneous dough.
Divide the dough into 8 balls, cover, and let rise in a warm place until doubled in size.
On a floured surface, roll each ball into a 9-inch circle and let rest for a few minutes.
Spread the filling in a thin layer over the dough and sprinkle with some cheese.
Heat a large skillet, place one dough in it, cover with a lid, and cook until the bottom browns and the meat is done, then sprinkle with paprika or chili and transfer to a serving plate.
Repeat with the remaining dough, stacking them and covering with a light towel to keep soft, and serve hot.
