Baked Sweet Potato Falafels with Chickpeas
Ingredients
- 1/3 roasted sweet potato
- 1 can chickpeas
- 1 clove garlic
- 3 tbsp oat flour
- 1 tsp paprika powder
- 1 tsp provence spices
- 1/2 tsp cumin powder
- juice from 1/2 lemon
- salt and pepper
Preparation
Mix all ingredients using a food processor.
Shape small falafel patties.
Place on a baking tray and bake at 190C for 25-30 minutes or until lightly browned.
Bowl assembly
Assemble in a bowl with lettuce, kale, spinach, cherry tomatoes, paprika, sweet potato, falafels, homemade hummus, balsamic vinegar, and sesame seeds.
