Baked Sweet Potato Falafels with Chickpeas

Ingredients

  • 1/3 roasted sweet potato
  • 1 can chickpeas
  • 1 clove garlic
  • 3 tbsp oat flour
  • 1 tsp paprika powder
  • 1 tsp provence spices
  • 1/2 tsp cumin powder
  • juice from 1/2 lemon
  • salt and pepper

Preparation

  1. Mix all ingredients using a food processor.

  2. Shape small falafel patties.

  3. Place on a baking tray and bake at 190C for 25-30 minutes or until lightly browned.

Bowl assembly

  1. Assemble in a bowl with lettuce, kale, spinach, cherry tomatoes, paprika, sweet potato, falafels, homemade hummus, balsamic vinegar, and sesame seeds.
