Cashew Biscuits Dipped in Chocolate

Ingredients

  • 1/2 cup ground roasted cashew
  • 1/2 cup fine-grained sugar
  • 3/4 cup flour
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/4 cup melted butter
  • 1/4 cup melted chocolate

Preparation

  1. Position the middle rack in the oven, preheat the oven to 180 degrees, and prepare short-rimmed baking sheets.

  2. In the mixer bowl, place the cashew, sugar, flour, egg, vanilla, and butter. Attach the mixing beater and operate at medium speed until dough forms.

  3. Between two pieces of parchment paper, roll out the dough to about 5 mm thickness. Using a pizza cutter, cut the dough into medium-sized squares.

  4. Bake the cashew biscuits for 10 minutes until light golden brown.

  5. Remove the biscuits from the oven. Using a wide metal spoon, transfer the biscuits to a wire rack and let them cool completely.

  6. In a deep plate, place the melted chocolate. Prepare a wide tray and place a piece of parchment paper in it.

  7. Take a square of biscuit and dip one corner in the chocolate. Place the biscuit on the parchment paper until it dries, then serve.
