Chipotle Chicken Flavoured Tofu

Ingredients

  • 2/3 block of tofu cut into fillets
  • ?1/2 can coconut cream
  • ?1 tablespoon tomato paste
  • ?mustard
  • ?frozen peas
  • ?frozen green beans
  • ?turmeric (for tofu and the sauce)
  • ?paprika (for tofu and the sauce)
  • ?poultry seasoning
  • ?ground cumin
  • ?ground coriander ?oregano

Preparation

  1. Ombine some turmeric and smoked paprika in a bowl. Roll tofu cutlets in it and fully coat. Add to a hot pan with oil, cover and cook on each side for 7 minutes

  2. Remove tofu and set aside once crispy

  3. And add all other ingredients except for frozen veggies. Stir to combine and turn pan down to medium

  4. Once the sauce is hot, add veggies and stir for about 5 minutes

  5. Add tofu, then top with fresh tomatoes and vegan cheese

  6. Bake at 200 degrees for 15 minutes. Serve with rice (not pictured because my rice looked like shit
