Cinnamon Raisin Cookies
Ingredients
- 1 1/2 cup gluten-free all purpose flour {or regular ap flour}
- 1/2 cup coconut sugar
- 1 tsp. baking powder
- 1/3 cup raisins
- 1 tbsp. cinnamon
- 1/2 cup almond milk
- 1 egg
Preparation
Preheat oven to 350f
In a small bowl, whisk together the egg & milk
In a large bowl, whisk together the flour, sugar, & baking powder—then stir in the raisins
Pour the wet ingredients into the dry and stir until a dough forms
The dough may be slightly sticky, so you can coat your hands with a little flour before rolling}
Roll the dough into 15-18 balls, flatten, & bake for 8 minutes!
