Coffee Layered Cake

Ingredients

  • 1 cup flour
  • 2/3 cup fine-grained sugar
  • 4 tablespoons unsweetened cocoa powder
  • 1.5 tablespoons instant coffee
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 3 tablespoons corn oil

Top layer

  • 1/3 cup sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1 cup boiling water

Preparation

  1. Adjust the oven rack to the middle position and preheat the oven to 180°C.

  2. Prepare a 9-inch pan by greasing it with butter and flouring it.

  3. In a deep bowl, combine flour, sugar, unsweetened cocoa powder, instant coffee, baking powder, and salt using a hand whisk until mixed.

  4. In another deep bowl, mix milk and corn oil with a whisk until homogeneous, then add to the flour mixture and stir with a wide plastic spoon until homogeneous. Pour into the prepared pan.

  5. In a small bowl, mix sugar and cocoa powder, then sprinkle over the cake mixture in the pan. Carefully pour boiling water over it without stirring.

  6. Place the pan in the oven and bake for 30 minutes. Test doneness with a wooden toothpick; it should come out clean.
