Crispy Baked Cauliflower Bites with Sweet Spicy Sauce
Ingredients
Cauliflower
- 1 medium head of cauliflower, cut into golf ball size pieces
Batter
- 3 tbsp flour
- 1 tbsp cornstarch
- 1 tsp Italian seasoning
- 1 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp pepper
- 4 tbsp unsweetened soy or almond milk
Breading
- 1/2 to 3/4 cup bread crumbs
- 2 tbsp nutritional yeast
- 1/4 tsp salt
Sweet & spicy sauce
- 2 tbsp soy sauce
- 2 tbsp maple syrup
- 2 tsp mirin
- 1 tbsp sriracha
- 1 tbsp ketchup
Buffalo sauce
- 1/2 cup Frank’s Red Hot Buffalo Sauce
Preparation
Preheat oven to 425°F
In a large bowl combine flour, cornstarch, Italian seasoning, garlic powder, salt and pepper. Whisk in milk until a thick batter forms that sticks to a spoon
Add cauliflower pieces and gently toss with a spatula to coat each piece evenly in the batter
Sprinkle half of the bread crumbs, nutritional yeast and salt over the coated cauliflower and toss to coat
Sprinkle the remaining breading ingredients and toss again until completely coated
Arrange the cauliflower bites in a single layer on a lined baking sheet, ensuring they are not touching
Bake for 25 minutes
While baking, prepare sauces by mixing Sweet & Spicy Sauce ingredients in one bowl and Buffalo Sauce in another (if making both)
Remove cauliflower from oven and let cool for a few minutes
Dip each cauliflower bite into the desired sauce to coat
Return coated bites to baking sheet and bake for an additional 10 minutes to crisp
Remove from oven, cool slightly, and serve
Air fryer method
Preheat air fryer to 400°F
Place breaded cauliflower bites in air fryer basket in a single layer and cook for 12-15 minutes until crisp
Dip cooked bites in sauce and return to air fryer for 5-10 minutes to crisp again
Check for crispness on both sides and adjust cooking time as needed
