English Cake with Almonds
Ingredients
- 1/2 cup almond slices
Cake mixture
- 2 cups flour
- 1 tablespoon baking powder
- 1 pinch salt
- 1 teaspoon vanilla extract
- 1 cup soft butter
- 1.25 cups powdered sugar
- 5 large eggs
- 1 teaspoon orange zest
- 1 teaspoon almond extract
- 2 tablespoons crushed almond slices
Preparation
Set the rack in the middle of the oven and preheat to 180°C.
Prepare a rectangular cake pan measuring 11 inches by 3 inches; grease with shortening and spread almond slices to cover the bottom and sides.
For the cake mixture, sift flour, baking powder, and salt onto parchment paper or into a deep bowl.
In the mixer bowl, combine butter and sugar; attach the whisk and mix on medium speed for 3 minutes until creamy and fluffy.
Add eggs one at a time, mixing on medium speed until each is fully incorporated; after the last egg, add vanilla extract, orange zest, and almond extract, then mix on medium speed for 1 minute until smooth.
Pour the cake mixture into the prepared pan and spread almond slices on top.
Bake in the oven for 55 minutes or until a toothpick inserted into the center comes out clean.
Remove from the oven, let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before serving.
