Homemade Cinnamon Biscuits with Jam
Ingredients
- 2 3/4 cups flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 tablespoon cinnamon
- 3/4 cup butter, soft
- 1 cup powdered sugar
- 2 large eggs
- 1 teaspoon vanilla extract
Decoration
- Apricot jam or powdered sugar
Preparation
Preheat the oven to 180°C and set the middle rack.
Sift the flour, baking powder, and salt on parchment paper or in a deep bowl.
In the mixer bowl, place butter and sugar, attach the whisk attachment, and mix on medium speed until creamy and crumbly.
Add one egg and mix on medium speed until incorporated, then add the second egg and vanilla, and mix until incorporated.
Remove the whisk attachment and attach the paddle attachment.
Add the flour and cinnamon mixture, mix on low speed until dough forms, then on medium speed for one minute.
Place the dough on the table, shape into a smooth disk, wrap in plastic, and chill in the refrigerator for about an hour.
Preheat the oven to 180°C and set the middle rack.
Prepare shallow baking sheets and cookie cutters as desired.
Take a portion of the dough, place it between two sheets of parchment paper, and roll it out to a 4 mm thickness.
Using the cutter, cut the dough into equal pieces, some with a hole in the middle.
Place the biscuit pieces on the baking sheets, leaving 1 inch between each.
Bake for 10 minutes and allow the biscuits to cool completely before assembling.
Using a wide knife, place a small amount of jam on the whole biscuit piece, then place the piece with the hole on top and press lightly to stick.
Sprinkle with powdered sugar and place on a serving dish.
Tips
Biscuits can be stored in an airtight container for several days.
