Homemade Luxurious Butter Biscuits
Ingredients
Dough
- 2 1/3 cups all-purpose flour
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 2 large eggs
- 1 1/2 teaspoons vanilla extract
- 1 cup softened butter
- 1 1/4 cups powdered sugar

Preparation
Position the wire rack in the middle of the oven and preheat the oven to 180°C.
Prepare shallow-rimmed baking sheets.
In a deep bowl, place the flour, cornstarch, salt, and baking powder, then mix with a fork or small whisk until combined.
In the mixer bowl, place the butter and sugar, attach the paddle attachment, and run the mixer on medium speed for 3 minutes.
Add one egg and mix on medium speed until incorporated, then add the second egg and mix until incorporated, and add the vanilla extract.
Add the flour mixture and mix on low speed until a smooth and soft cookie dough forms.
Take a piece of dough the size of a walnut, shape it lightly into a ball, and gently press to form a small disk, then sprinkle a little raisins on the disk and place on the baking sheet.
Take another piece of dough the size of a walnut, roll the ball in coarse sugar, gently press to coat with a thin layer of sugar, and place on the baking sheet, or use a cookie shaper attachment to shape as desired.
Bake the biscuits for 10 to 12 minutes until the bottom is very light golden.
Remove the biscuits from the oven, place the baking sheets on a wire rack, let cool slightly, then use a wide metal spatula to transfer to a wire rack and cool completely.
Storage tips
Place the biscuits in colored paper cups and store in a metal box until serving time.
