Flourless Molten Chocolate Lava Cakes

Ingredients

  • 1/2 cup ghee
  • 1 cup dark chocolate, chopped
  • 4 eggs + 4 egg yolks, room temperature
  • 1/3 cup coconut sugar
  • 2 teaspoons vanilla
  • 1/4 teaspoon salt

Preparation

  1. Preheat oven to 420F degrees and grease four 6 oz. ramekins with ghee or oil. Then coat with a bit of cocoa powder so it covers the total insides of the ramekins.

  2. Add ghee and chopped chocolate in a pan over low heat and let the chocolate melt slowly.

  3. Once the chocolate is mostly melted, whisk until it's smooth then remove from heat. (Or heat in microwave on 30 second intervals.)

  4. In a large bowl add eggs, egg yolks, coconut sugar, vanilla and salt and beat together until really light and airy.

  5. Fold the chocolate mixture into your egg mixture.

  6. Divide the batter between the four ramekins, filling nearly to the top.

  7. Bake for 10-12 minutes. They are done when the tops have a dry, solid crust, but still jiggle when shaken. Do not over bake them, if anything take them out just slightly early if you are worried.

  8. Let cool for 2 minutes.

  9. Run a knife along the edges to loosen the cakes.

  10. Place a plate on top of the ramekins and flip upside down onto the plate.
