Healthy Dark Chocolate Beetroot Brownies
Ingredients
- 200g culinary dark chocolate
- 100g unsalted butter
- 3 eggs
- 1 teaspoon vanilla extract
- 20g organic cocoa powder
- 200g coconut sugar
- 100g self raising flour
- 300g cooked beetroot grated
Preparation
Preheat oven to 160C
Melt 200g culinary dark chocolate and 100g unsalted butter over a pan of simmering water
Remove bowl from pan and let cool down slightly then add 3 eggs
Add 1 teaspoon vanilla extract
Add 20g organic cocoa powder and whisk
Add 200g coconut sugar and whisk
Add 100g self raising flour and whisk (for gluten-free use oat flour with baking powder)
Add 300g cooked beetroot grated and whisk
Place mixture in a tin over baking paper
Cook in oven for 40 minutes
Cut into chunky brownies or smaller bite size pieces
Store in airtight container in the fridge or at room temperature for 2 days
