Oatmeal Peanut Butter Cookies

Ingredients

  • 1 cup natural creamy peanut butter
  • 2/3 cup coconut sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 3/4 cup rolled oats (gluten-free if desired)
  • 1/2 tsp baking soda
  • 2/3 cup chocolate chips
  • Flakey sea salt for garnish

Preparation

  1. First, preheat the oven to 350°F

  2. Mix rolled oats and baking soda in a small bowl and set it aside.

  3. Take a larger bowl and add eggs, coconut sugar, vanilla, and then the peanut butter. Keep whisking the mixture until it is velvety smooth.

  4. Now add the oatmeal mixture to the cookie batter. Resume whisking it until it is nice and doughy.

  5. Next, add your chocolate chips to the batter and fold them in gently.

  6. Once this is done, line your baking sheets with parchment paper and put dollops of the cookie dough onto it.

  7. Pop your baking sheet into the oven and let it bake for 5-12 minutes.

  8. Remove them once the edges turn slightly brown.

  9. Set them to cool for 10-15 minutes.

  10. You may sprinkle them with sea salt before you serve.
