Gooey S’more Blondies with Marshmallows and Chocolate
Ingredients
- 2 eggs (if vegan you can sub in flax eggs: 1 tbsp ground flax seed + 2 1/2 tbsp water = 1 egg)
- 2/3 coconut sugar
- 4 tbsp coconut oil
- 4 tbsp almond butter
- 1 tsp vanilla extract
- 1 1/2 cups gluten free flour
- 1 tsp baking soda
- 2/3 cup vegan mini marshmallows
- 2/3 cup dark chocolate chunks (I chopped up a @hukitchen salty dark chocolate bar)
- dash of sea salt
Preparation
Preheat oven to 350F - spray 8x8 dish with coconut oil.
Add in a small mixing bowl your eggs, coconut sugar, coconut oil, almond butter, and vanilla extract - whisk with a fork until everything is fully combined.
In separate bowl mix together your gluten free flour, baking soda, and sea salt.
Incorporate the dry mixture into the wet mixture until it’s formed into a moist dough.
Fold in the mini marshmallows & chocolate.
Scrape into your oven safe dish and bake for 20ish minutes or until a toothpick comes out clean.
