Gluten Free Coconut Blondies

Ingredients

  • 2 cage free eggs
  • 2/3 cup coconut sugar
  • 4 tbsp coconut oil
  • 1 tsp vanilla extract
  • 4 tbsp @georgiagrinders cashew butter
  • 1 tsp baking soda
  • 1 1/2 cup almond flour
  • 1/4 cup finely chopped @traderjoes toasted coconut flakes
  • handful dark chocolate chunks (optional)
  • dash of salt

Preparation

  1. Preheat oven 350F - grease oven safe 8x8 dish and set aside.

  2. Mix all ingredients in the order above.

  3. Scoop into baking dish.

  4. Press down dough - make sure it’s evenly distributed.

  5. Pop in the oven for about 9 minutes but thoroughly check throughout! If you over-cook it will be dry!

  6. As soon as it’s removed from the oven top with a fine layer of more finely chopped toasted coconut flakes.
