Vegan Grain-Free Blondies for Passover

Ingredients

Dry

  • 1 1/4 cups almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon sea salt

Wet mix

  • 1 flax egg
  • 1/2 cup almond butter
  • 1/4 cup coconut oil
  • 1/2 cup coconut sugar
  • 1/4 cup almond milk
  • 1 teaspoon vanilla extract
  • Vegan chocolate chips

Preparation

  1. Prep your flax egg and preheat the oven to 350°F.

  2. Mix the dry ingredients in a small bowl and the wet ingredients in a medium bowl, then slowly combine the dry into the wet to make the batter.

  3. Add the batter to an 8x8 pan and bake for 30-32 minutes. Cool down for at least 10 minutes before cutting.
