Soft and Delicious Cheesecake Brownies
Ingredients
Brownie mixture
- 115g dark chocolate chunks or bittersweet chocolate
- 115g (1/2 cup) unsalted butter
- 150g (3/4 cup) brown sugar
- 2 eggs
- 50g (1/2 cup) all-purpose flour
Cheesecake mixture
- 1 egg
- 225g (1 cup) cream cheese
- 50g (1/4 cup) caster sugar
- 1 teaspoon vanilla extract
Preparation
Cheesecake mixture
Beat the egg in a bowl and add cream cheese, sugar, and vanilla extract.
Beat until smooth and creamy.
Brownie
Preheat oven to 160°C.
Grease an 8-inch x 8-inch pan with butter and line with parchment paper.
Heat water in a small pot until boiling and place a large heatproof bowl over the pot covering the surface.
Add roughly chopped chocolate chunks and butter, then stir until melted and combined.
Once melted, remove the bowl from the boiling water pot and stir briefly while adding caster sugar.
Add eggs one at a time and stir until combined.
Add flour and stir gently.
Pour 2/3 of the brownie mixture into the pan and spread evenly.
Then pour the cheesecake mixture over the brownie layer and spoon the remaining 1/3 brownie mixture over the cheese layer in dollops.
Use a skewer and swirl to create a marble pattern.
Bake for 30-35 minutes or until the cake is set in the center.
Cool and then remove to cut into small pieces.
Tips
Chill in the refrigerator so the cake sets properly before cutting.
