High Protein Baked Potato
Ingredients
- 4 large potatoes (300 g each)
- Oil as desired
- pinch of salt
Filling
- 1 small carrot
- 1/2 pepper
- 1 spring onion
- 1 small red onion
- 200 g smoked tofu
- 60 ml oat cream cuisine
- 60g cream cheese
- 1 level teaspoon salt
Toppings
- Vegan scattered cheese
- Soy Skyr
- Thyme, rosemary, pepper, salt
Preparation
Score the potatoes, spread oil and salt on them, and bake in the oven at 200 degrees fan for 60 minutes.
Dice the vegetables and smoked tofu into small cubes.
Remove the potatoes from the oven and scoop out the insides with a spoon.
Mix the potato mixture with the remaining filling ingredients and fill into the hollowed potatoes.
Sprinkle with cheese and bake in the oven at 200 degrees fan for 20 minutes.
Enjoy with toppings.
