Portobello Mushroom Pizza with Fresh Vegetables

Ingredients

  • 1 large portobello mushrooms, wiped clean, stems and inside removed (as above photo shown)
  • 1/8 tsp garlic powder
  • 2 -3 leaves of fresh basil or dried
  • 1 slice of fresh tomato or pizza sauce of choice
  • 1/8 tsp dried oregano
  • OPTIONAL: 1 tbsp of guacamole or few slices of avocado
  • OPTIONAL: Himalayan Salt & Crushed Black Pepper, Cayenne Pepper (for spicy)
  • OPTIONAL: onions, bell peppers, garlic cloves, olives, etc

Preparation

  1. Preheat oven to 400 degrees F.

  2. Place cleaned mushroom(s) on a non-stick sheet. Sprinkle with dried spices, then bake for 5 minutes.

  3. Once partially baked, take mushroom(s) out of the oven and top with tomato and other veggies.

  4. Bake for 5-10 minutes, or until the veggies are mostly cooked.

  5. Remove from oven - top with guacamole or fresh avocado.
