Roast Cauliflower Soup

Ingredients

  • 2 cauliflowers cut into florets
  • 3 tbsp extra virgin olive oil
  • 1 onion chopped
  • 2 cloves garlic, roughly chopped
  • 6 cups vegetable broth
  • Optional (but so delicious) creamy element
  • Half cup cream OR two tbsp butter OR half cup dairy free cream
  • 1 tsp salt and freshly ground pepper
  • Toppings: croutons, chilli, herbs, seeds, bacon bits or if you want to make it really special ... seared scallops

Preparation

  1. Preheat the oven to 175C ?Coat the cauliflower with 2 tbsp olive oil and put on an oven tray ?Bake for 35 -40 minutes checking halfway ?While the cauliflower is roasting, cook the onion and garlic in a large pan, in 1 tbsp olive oil over medium heat till soft and caramelised

  2. This takes about 10 minutes ?When the cauliflower is ready, set aside a few florets for garnish and add the rest to the onions and garlic ?Add the vegetable broth, bring to a boil and simmer for 15 minutes

  3. Blend using a stick blender or transfer to a food processor and blend till smooth ?If using, add your creamy element and blend once more ?Season, add your choice of toppings and enjoy
