Roasted Veg Salad with a Miso Dressing

Ingredients

  • courgette
  • yellow pepper
  • broccoli and red onion
  • miso paste
  • teriyaki sauce
  • liquid aminos
  • maple syrup and Dijon mustard
  • roasted veg
  • - fried tofu
  • - lettuce and spinach leaves

Preparation

  1. Chop up your veg into bite size pieces

  2. I used courgette, yellow pepper, broccoli and red onion

  3. Spray with oil and top with salt, garlic powder and mixed herbs

  4. Roast for 20-30mins at 180° - tossing a couple times

  5. Take out and leave to cool

  6. MISO DRESSING

  7. Mix together miso paste, teriyaki sauce, liquid aminos, maple syrup and Dijon mustard (adjust to taste)

  8. SALAD

  9. Roasted veg

  10. Fried tofu

  11. Lettuce and spinach leaves

  12. I added some pickled cucumber on the side as well (thinly slice cabbage and top with rice vinegar, mirin, maple syrup and leave to pickle)

  13. Top with sesame seeds and dressing enjoy
