Sweet and Savory Paleo Stuffed Sweet Potatoes
Ingredients
- 2 sweet potatoes
- 1/2 banana
- organic cashew butter
- dates
- 1/2 avocado
- red pepper flakes
Preparation
Preheat oven to 400°F.
Poke several holes in each sweet potato with a fork.
Bake the sweet potatoes for 50-60 minutes until tender.
Once baked, split open the sweet potatoes.
Slice 1/2 banana and add on top.
Drizzle with organic cashew butter.
Add dates.
Slice 1/2 avocado and place on top.
Sprinkle with red pepper flakes.
For reheating, use the broil setting in the oven or microwave as preferred.
