Sweet and Savory Paleo Stuffed Sweet Potatoes

Ingredients

  • 2 sweet potatoes
  • 1/2 banana
  • organic cashew butter
  • dates
  • 1/2 avocado
  • red pepper flakes

Preparation

  1. Preheat oven to 400°F.

  2. Poke several holes in each sweet potato with a fork.

  3. Bake the sweet potatoes for 50-60 minutes until tender.

  4. Once baked, split open the sweet potatoes.

  5. Slice 1/2 banana and add on top.

  6. Drizzle with organic cashew butter.

  7. Add dates.

  8. Slice 1/2 avocado and place on top.

  9. Sprinkle with red pepper flakes.

  10. For reheating, use the broil setting in the oven or microwave as preferred.
