Sweet Potato and Black Bean Protein Bowl
Ingredients
- 4 sweet potatoes
- 1 can of black beans
- 1 bag of frozen broccoli
- 2 green onions
- 1 jalapeño
- Cilantro
- 1 whole wheat pita
- Salt and pepper
Green dressing
- Trader Joe’s Green Goddess dressing (avocado, lemon juice, chives, basil, garlic, parsley)
Preparation
You will need an oven and a can opener.
Preheat oven to 425°F. Cut sweet potatoes into wedges and season with salt and pepper. Bake for 30-35 minutes.
While sweet potato wedges are baking, cook broccoli in the microwave according to package instructions.
Dice jalapeño, green onions, and cilantro. Open can of black beans.
Once sweet potato wedges are done baking, add them to a bowl along with all other ingredients and drizzle with Trader Joe’s Green Goddess dressing.
