Black Bean Quinoa Bowl
Ingredients
- 2 cups quinoa
- 1 can of black beans
- 1 can of pinto beans
- 1 can corn kernels
- 2 avocados
- 2 jalapeños (optional)
- Cilantro to taste
- 3-4 limes (juice)
- Salt and pepper to taste
Preparation
Boil 4 cups of water to cook the quinoa. Once water boils, turn down to a simmer, add 2 cups of quinoa. Cover pot and set timer to 15 minutes.
Open cans of beans and corn and drain water. Dice jalapeños, avocados and mince cilantro. Add beans, corn, jalapeños, avocado and cilantro to mixing bowl.
Cut limes in half, add the juice to the ingredients in the mixing bowl.
After 15 minutes, check if quinoa is cooked; water should be drying up. Let quinoa cool off and add your desired amount of quinoa to the mixing bowl.
Serve with tortilla chips and salsa.
