Sweet Potato Blender Brownies with Coconut Caramel
Ingredients
- 1 cup cooked sweet potato
- 1/2 cup cacao powder
- 1/2 cup maple syrup
- 1 scoop chocolate protein powder
- 1/2 cup peanut butter
- 2 tsp baking powder
- 1/2 cup oat flour
- 1/4 cup dark chocolate chips
- 1 tsp vanilla
Coconut caramel
- coconut sugar
- vanilla
- coconut milk
Preparation
Preheat your oven to 180 degrees and line a square cake pan with baking paper.
Blend all the ingredients in a bowl or food processor until a thick batter consistency is achieved. Add a little more maple syrup if desired. Transfer the mixture to the lined tin and top with dark chocolate chips.
Bake in the oven for approximately 30 minutes or until a toothpick inserted comes out mostly clean. For the coconut caramel sauce, combine coconut sugar, vanilla, and coconut milk in a small saucepan until the sugar is dissolved.
Notes
Sweet potatoes provide antioxidant and anti-inflammatory benefits, especially when cooked by steaming, boiling, or baking.
Limit intake to no more than 1/2 cup of cooked sweet potato to avoid digestive issues from mannitol in sensitive individuals.
