Sweet Potato Blender Brownies with Coconut Caramel

Ingredients

  • 1 cup cooked sweet potato
  • 1/2 cup cacao powder
  • 1/2 cup maple syrup
  • 1 scoop chocolate protein powder
  • 1/2 cup peanut butter
  • 2 tsp baking powder
  • 1/2 cup oat flour
  • 1/4 cup dark chocolate chips
  • 1 tsp vanilla

Coconut caramel

  • coconut sugar
  • vanilla
  • coconut milk

Preparation

  1. Preheat your oven to 180 degrees and line a square cake pan with baking paper.

  2. Blend all the ingredients in a bowl or food processor until a thick batter consistency is achieved. Add a little more maple syrup if desired. Transfer the mixture to the lined tin and top with dark chocolate chips.

  3. Bake in the oven for approximately 30 minutes or until a toothpick inserted comes out mostly clean. For the coconut caramel sauce, combine coconut sugar, vanilla, and coconut milk in a small saucepan until the sugar is dissolved.

Notes

  1. Sweet potatoes provide antioxidant and anti-inflammatory benefits, especially when cooked by steaming, boiling, or baking.

  2. Limit intake to no more than 1/2 cup of cooked sweet potato to avoid digestive issues from mannitol in sensitive individuals.
