Turkish Bread with Sesame and Cumin
Ingredients
Dough
- 4.5 cups flour
- 4 teaspoons instant yeast
- 3 tablespoons sugar
- 1 tablespoon salt
- 0.5 cups milk
- 1 cup water
- 0.25 cups butter or ghee or olive oil or corn oil
Topping
- 1 large egg
- 3 tablespoons roasted sesame
- 1 tablespoon whole cumin seeds
Preparation
In the mixer bowl, place 4 cups of flour, the yeast, sugar, and salt, mix to combine, and set aside.
In a small pot, place the milk, water, and butter, heat until the butter melts and the mixture is warm, add it to the flour, attach the dough hook and run until the dough forms, add more flour if the dough is soft, knead on low speed for 4 to 5 minutes until you get a smooth dough, place the dough in an oiled bowl, cover it, and leave it in a warm place for about an hour or until it doubles in size.
Press on the dough to release the air and let it rest for a few minutes.
Get a wide tray, shape the dough into a large disc, and place it on the tray.
Cover the disc with a cotton cloth and let it double in size.
Preheat the oven to 190°C and set the middle rack.
Place the egg in a small bowl, beat with a fork, then use a brush to coat the surface of the bread with the egg.
Sprinkle the sesame and cumin on the bread, use a knife to make some decorative lines on the surface, and let it rest uncovered for about 5 minutes.
Put the bread in the oven and bake for 25 to 30 minutes until the bread is done.
