Vegan Baked Donuts with Raspberry Glaze
Ingredients
Donuts
- 1 1/2 cups plain flour (sifted)
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 3/4 cup almond milk
- 1 tsp apple cider vinegar
- 1/2 cup coconut sugar
- 3 TBS canola oil
- 1/2 tsp vanilla extract
Raspberry glaze
- 1/2 cup fresh raspberries
- 1 1/2 cups icing sugar
- 1/4 tsp pure vanilla extract
- 1/4 tsp antioxidant blend
Preparation
Preheat the oven to 180°C and spray two donut pans with non-stick spray.
In a medium bowl, combine the flour, baking powder, baking soda, and salt.
In a different mixing bowl, combine the milk and apple cider vinegar, stir until curdled, then add the sugar, oil, and vanilla extract, and stir in the dry mixture until just combined.
Spoon the batter into a piping bag and pipe it into the donut pan, or simply use a spoon to fill the pan.
Bake the donuts for 15 minutes or until golden brown and baked through, then place them on a cooling rack.
To make the glaze, press the raspberries through a fine sieve to extract the juice, discarding the seeds, add the powdered sugar and whisk until super smooth, then add the vanilla extract and antioxidant blend, and stir well to ensure there are no lumps.
When the donuts are cool, dip their tops into the glaze to coat, and then let the glaze set, and enjoy right away or on the same day.
