Vegan Smartie Cookies
Ingredients
- 110g caster sugar
- 125g margarine
- 1 teaspoon golden or maple syrup
- 2 tsp vanilla extract
- 150g plain flour
- 2 heaped tbsp cocoa powder
- 80g pack of Doisy and Dam chocolate drops
Preparation
Preheat the oven to 180 degrees.
Add the margarine and sugar to a large mixing bowl and beat them together.
Add the vanilla extract and syrup and beat them in.
Mix in the plain flour; the batter will thicken but won’t form a solid dough.
Scoop half the mixture out of the bowl and place it in another bowl.
To one of the bowls, add the cocoa powder and beat it in.
Add 40g of the smarties to one bowl and the remaining 40g to the other bowl and fold them in.
Line two baking trays with paper and grab two teaspoons. Scoop a heaped teaspoon of cookie dough from the bowl and place it on the baking tray. Use the other spoon to help remove the dough from the spoon. Repeat until all the cookie dough has been used up.
Flatten the cookie dough slightly with the back of the teaspoon.
Bake in the oven for 12-13 minutes. The cookies may not look fully cooked, but they will firm up as they cool.
