White Chocolate Cranberry Cookies

Ingredients

  • 190g margarine or vegan butter
  • 170g caster sugar
  • 1 and 1/2 tsp vanilla extract
  • 1 large tsp golden syrup
  • 1 tsp baking powder
  • 225g plain flour
  • 45g dried cranberries
  • 40g white chocolate

Preparation

  1. Preheat the oven to 180 degrees and line a baking tray

  2. Add the sugar and margarine or butter to a mixing bowl and cream together

  3. Add the remaining ingredients apart from the cranberries and white chocolate to the bowl and mix until a dough ball has formed, using hands if easier

  4. Add the cranberries and white chocolate and mix in

  5. If making small cookies, tear off a walnut-sized piece, roll into a ball, place on the baking tray, and squash slightly, then repeat for all dough and bake for 12-15 minutes

  6. Alternatively, for a large cookie, take a chunk larger than a tennis ball, roll into a ball, place in the center of a baking tray, squash slightly, and bake for 20-25 minutes, using remaining dough for small cookies as described

  7. Remove from oven when done, noting that cookies may not look fully baked

Tips

  1. Sugar continues cooking after removal from the oven, so remove cookies even if they appear slightly underdone
