Vegan Millionaire's Cookie Bars
Ingredients
Base
- 275g of plain flour
- 95g of caster sugar
- 200g of dairy-free softened butter or margarine
- 50g of dairy-free chocolate chips (vegan milk or dark)
Caramel
- 400g of vegan condensed milk
- 120g of dairy-free block butter
- 80g of golden syrup
- 25g of caster sugar
Chocolate topping
- 140g of dairy-free dark or vegan milk chocolate
- 45g of dairy-free white chocolate
Preparation
Preheat the oven to 180°C and line a baking tin with parchment paper.
Mix the base ingredients together until combined, then press the mixture evenly into the prepared tin.
Bake the base for 20-25 minutes or until golden brown, then allow it to cool completely.
For the caramel, combine all caramel ingredients in a saucepan and heat over medium heat, stirring continuously until thickened and golden, about 10-15 minutes.
Pour the caramel over the cooled base and spread it evenly, then let it set.
Melt the chocolate topping ingredients separately and layer or swirl them over the set caramel.
Allow the bars to cool and set completely in the refrigerator before cutting into pieces.
