Simple 4-Ingredient Vegan Rainbow Cookies

Ingredients

  • 350g plain flour
  • 300g vegan butter block
  • 100g caster sugar
  • 2 tsp vanilla extract

Preparation

  1. Mix the ingredients in a food processor or by hand if preferred.

  2. Put the flour, sugar, and vanilla in the food processor.

  3. Cut the butter into small pieces and add them to the mixture.

  4. Whizz until the mixture starts to clump together, but do not overmix to avoid a smooth dough.

  5. Remove the mixture and press it together with your hands.

  6. Roll out on a well-floured surface to about 5mm thick.

  7. Cut out cookies with a cookie cutter and place on lined baking sheets.

  8. Bake at 180°C for 10 minutes or until the edges are just beginning to brown.

  9. Cool on wire racks before icing.

  10. Optionally, ice the cookies with different colors, dip in icing, or add sprinkles for decoration.
