The Best Vegan Millionaires Shortbread
Ingredients
- 100g vegan butter
- 50g caster sugar
- 138g plain flour
- 50g vegan butter
- 50g soft light brown sugar
- 300g coconut condensed milk
- 85g vegan milk chocolate (1 bar)
- 20g vegan white chocolate chips
- preheat your oven to 160°c fan
- cream 100g vegan butter w/ the caster sugar
- beat in the flour and mix to form a dough
Preparation
Preheat your oven to 160°C fan
Cream 100g vegan butter w/ the caster sugar
Beat in the flour and mix to form a dough
Press this into a silicone tin (i used a loaf tin) and bake for ~25 mins [until just golden]
Leave to cool in the tin
Add the remaining butter, brown sugar and condensed milk into a saucepan ~> heat until dissolved
Turn the heat up and bring to a boil, then cook for 8 minutes constantly stirring with a spatula
Pour the caramel onto the shortbread and set in the fridge for at least an hour
Once set, melt the milk chocolate and pour over the caramel ~> then melt the white choc chips and marble through the milk choc with a knife
Set & keep in the fridge, cut into 6 large slices or 18 small squares
