The Best Vegan Millionaires Shortbread

Ingredients

  • 100g vegan butter
  • 50g caster sugar
  • 138g plain flour
  • 50g vegan butter
  • 50g soft light brown sugar
  • 300g coconut condensed milk
  • 85g vegan milk chocolate (1 bar)
  • 20g vegan white chocolate chips
  • preheat your oven to 160°c fan
  • cream 100g vegan butter w/ the caster sugar
  • beat in the flour and mix to form a dough

Preparation

  1. Preheat your oven to 160°C fan

  2. Cream 100g vegan butter w/ the caster sugar

  3. Beat in the flour and mix to form a dough

  4. Press this into a silicone tin (i used a loaf tin) and bake for ~25 mins [until just golden]

  5. Leave to cool in the tin

  6. Add the remaining butter, brown sugar and condensed milk into a saucepan ~> heat until dissolved

  7. Turn the heat up and bring to a boil, then cook for 8 minutes constantly stirring with a spatula

  8. Pour the caramel onto the shortbread and set in the fridge for at least an hour

  9. Once set, melt the milk chocolate and pour over the caramel ~> then melt the white choc chips and marble through the milk choc with a knife

  10. Set & keep in the fridge, cut into 6 large slices or 18 small squares
