Quick and Flavorful Blackened Salmon Salad with Avocado Dressing
Ingredients
- 1 large salmon fillet (about 3 pieces)
- 2 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp oregano
- Sprinkle of cayenne
- Sprinkle of salt & pepper
- Olive oil (for brushing the salmon)
Avocado Dressing
- 1 avocado
- 3 tbsp olive oil
- Juice of 1 lime
- 1-2 cloves garlic
- 3 tbsp water
- Salt & pepper to taste
Preparation
Preheat the oven to 400F.
Brush the salmon fillet with olive oil.
In a small bowl, mix paprika, garlic powder, onion powder, oregano, cayenne, salt, and pepper.
Spread the spice mixture evenly on the salmon.
Place the seasoned salmon on a baking sheet and bake in the preheated oven for about 15 minutes, or until the salmon is cooked to your desired level of doneness. Cooking time may vary depending on the thickness of the salmon fillet.
While the salmon is baking, prepare the avocado dressing.
In a blender or food processor, combine the avocado, olive oil, lime juice, garlic cloves, water, salt, and pepper.
Blend the ingredients until smooth and creamy.
Once the salmon is cooked, remove it from the oven and let it cool slightly.
Break the salmon into smaller pieces or flake it with a fork.
In a serving bowl, assemble the salad by combining the blackened salmon with your choice of salad greens and any additional toppings you desire.
Drizzle the avocado dressing over the salad.
Toss the salad gently to coat the ingredients with the dressing.
