Avocado Toast with Fried Egg

Ingredients

  • 2 pieces of toast
  • 1/2 avocado, mashed
  • 1 egg
  • Fourth & Heart ghee (for frying)
  • Sautéed spinach

Preparation

  1. Toast two slices of bread until golden brown.

  2. While the bread is toasting, peel and pit half an avocado. Mash the avocado in a bowl.

  3. In a skillet, melt Fourth & Heart ghee over medium heat.

  4. Crack an egg into the skillet and fry until the whites are set and the yolk is still runny. Cook to your preferred level of doneness.

  5. While the egg is frying, sauté spinach in a separate pan until wilted.

  6. Spread the mashed avocado evenly onto the toasted bread slices.

  7. Carefully transfer the fried egg on top of one of the slices.

  8. Place the sautéed spinach on the other slice of toast.

  9. Season the egg and spinach with salt and pepper to taste.

  10. Assemble the two slices of toast together, creating a sandwich-like structure.
