Banana Oat Pancakes

Ingredients

  • 3/4 cup rolled oats
  • 1 tsp baking powder
  • 1 ripe banana
  • 1/2 cup oat milk
  • 1/2 tbsp apple cider vinegar

Preparation

  1. Mix oat milk with apple cider vinegar and set aside

  2. Place oats in a food processor and blitz to flour consistency

  3. In a bowl, mash the banana with a fork, add milk mixture and stir to combine

  4. Add oat flour and baking powder and mix until well combined, don't overmix

  5. Bake your pancakes on a hot skillet greased with a drop of coconut oil

  6. Serve warm
