Banana Oat Pancakes
Ingredients
- 3/4 cup rolled oats
- 1 tsp baking powder
- 1 ripe banana
- 1/2 cup oat milk
- 1/2 tbsp apple cider vinegar
Preparation
Mix oat milk with apple cider vinegar and set aside
Place oats in a food processor and blitz to flour consistency
In a bowl, mash the banana with a fork, add milk mixture and stir to combine
Add oat flour and baking powder and mix until well combined, don't overmix
Bake your pancakes on a hot skillet greased with a drop of coconut oil
Serve warm
