Oatmeal Waffles with Coconut Cream

Ingredients

  • 1.5 cup rolled oats
  • 1 tbsp chia seeds
  • 1 tbsp hemp seeds
  • 1 tsp baking powder
  • 1 ripe banana
  • 1 cup plant milk
  • 1 tbsp apple cider vinegar

Preparation

  1. Add oats, chia seeds, and hemp seeds to a food processor and blitz to a flour consistency.

  2. Transfer to a mixing bowl, add baking powder, mashed banana, plant milk, and apple cider vinegar.

  3. Mix to combine; the batter will be runny at this point.

  4. Leave the batter to rest for 10-15 minutes; it will thicken.

  5. Bake waffles in a hot, non-stick waffle iron greased with coconut oil, using approximately 2 tablespoons of batter per waffle. Baking time depends on your waffle iron.

  6. Serve topped with coconut cream (or substitute coconut yogurt), berries, and coconut nectar for added flavor.
