Banana Yogurt Pancakes

Ingredients

  • 1 large banana, mashed
  • 150g self raising flour
  • 1 egg
  • 250g Greek yogurt
  • 150ml milk

Preparation

  1. Whisk all ingredients in a large bowl until a smooth batter is formed

  2. Grease a non stick pan with a little sunflower oil and drop 2 tbsp of batter to form a circle. I do 4 small pancakes at a time

  3. Cook on a medium to low heat until bubbles begin to form, then flip to cook the other side. A minute or two per side should be fine

  4. Remove and allow to cool slightly on a rack whilst you cook another batch

  5. Serve with Greek yogurt, sliced strawberries and a drizzle of maple syrup
