Banana Yogurt Pancakes
Ingredients
- 1 large banana, mashed
- 150g self raising flour
- 1 egg
- 250g Greek yogurt
- 150ml milk
Preparation
Whisk all ingredients in a large bowl until a smooth batter is formed
Grease a non stick pan with a little sunflower oil and drop 2 tbsp of batter to form a circle. I do 4 small pancakes at a time
Cook on a medium to low heat until bubbles begin to form, then flip to cook the other side. A minute or two per side should be fine
Remove and allow to cool slightly on a rack whilst you cook another batch
Serve with Greek yogurt, sliced strawberries and a drizzle of maple syrup
