Fluffy Banana Pancakes

Ingredients

  • 1 cup self-raising wholemeal flour
  • 1 egg
  • Cinnamon
  • Madagascan vanilla extract
  • Half a banana
  • Olive oil
  • Wild berries
  • Greek yogurt

Preparation

  1. Mash the banana in a bowl

  2. Add egg, cinnamon, and vanilla extract to the mashed banana and mix well

  3. Stir in the self-raising wholemeal flour to form a batter

  4. Heat olive oil in a frying pan over medium heat

  5. Pour portions of batter into the pan and cook until bubbles appear on the surface, then flip and cook the other side until golden

  6. Serve the pancakes topped with wild berries and Greek yogurt
