Best Creamy Pesto Pasta Dish
Ingredients
- 1 hefty portion pasta
- 1/2 onion
- 1 clove garlic (optional)
- almond milk (approx 1/4 cup)
- 1 heaped tbsp nutritional yeast
- pesto (homemade or store bought)
Pesto
- 2 packs (60g) fresh basil
- 50g pine nuts
- pinch salt
- 1 clove garlic
- 1/4-1/2 cup olive oil and water mix
- optional: 1 tbsp lemon juice
- optional: 1/4 cup nutritional yeast
Preparation
Cook pasta according to package instructions.
Sauté onion and garlic (if using) in olive oil or water until soft and starting to brown in a large frying pan.
Add a splash of almond milk, nutritional yeast, and pesto, then bring to a simmer.
Add the cooked pasta and stir, adding more almond milk if necessary.
Plate up and serve with peas, baked falafel, and fresh tomato.
Pesto making
Blend or use a food processor to mix fresh basil, pine nuts, salt, garlic, and olive oil and water mixture until smooth. Start with less oil and water, adding more as needed. Optionally, add lemon juice and nutritional yeast.
