Carrot Cake in Smoothie Bowl Form

Ingredients

  • 1 sliced banana, frozen
  • 1 1/2 cup diced or grated carrot, frozen
  • 3-4 tbsp plant milk
  • 2-3 tbsp vegan yogurt (can sub coconut cream)
  • 1/2 tsp cinnamon
  • dash nutmeg, ginger, vanilla (optional)
  • raisins, pecans, coconut flakes, and nut butter for topping

Preparation

  1. Place a serving bowl in the freezer (don’t skip!)

  2. Combine all ingredients except toppings in a high-speed blender and blend until smooth

  3. Add to chilled bowl and top with all the goods! eat immediately
