Cheesy Hash Browns

Ingredients

  • cauliflower: 1/2 head
  • chives: 1t
  • vegan mozzarella : 2 c
  • tarragon: 1/2 t
  • pepper: 2 t
  • arrowroot powder: 2 t
  • olive oil: 1 t for hash browns + more for frying
  • salt: 1+1 t

Preparation

  1. Grate cauliflower head or pulse in a food processor

  2. Add 1t salt to grated cauliflower and mix well

  3. Place the cauliflower in a cloth and squeeze out as much water as possible

  4. Add the remaining ingredients to the prepared cauliflower

  5. Shape into hash browns and bake till golden brown or refrigerate for 30 minutes then pan fry in olive oil
