Chocolate and Cherry Breakfast Oat Cake

Ingredients

  • 50g rolled oats
  • 15g @feat_eatsmart Vegan Protein Pudding Mix
  • 1 tsp chia seeds
  • 100ml water
  • 250ml unsweetened almond milk

Toppings

  • 120ml dairy-free almond milk yoghurt
  • 15g @feat_eatsmart Vegan Protein Pudding Mix
  • 10g 70% dark chocolate, shards
  • Cherries

Preparation

  1. The night before, heat the oats, chia seeds, water and almond milk in a pan until the oats are cooked and mixture thickens.

  2. Off the heat, add in the 15g of Vegan Protein Pudding Mix and stir to combine well.

  3. Place the mixture into a bowl and smooth the top out.

  4. Allow to cool completely. Cover and refrigerate overnight.

  5. The next morning, mix the dairy-free yoghurt and remaining Vegan Protein Pudding Mix using a fork until combined and smooth.

  6. Turn out the oat cake onto a plate and cover with the yoghurt frosting.

  7. Sprinkle with the dark chocolate shards and top with some cherries.
