Chocolate Banana Cereal Bars

Ingredients

  • 1 cup brown rice puffs or other cereal
  • 1/2 cup coconut
  • Large handful of dried fruit and nuts
  • 3 squishy dates
  • 150g peanut butter
  • Sea salt
  • 2 tablespoons coconut oil
  • Melted chocolate for covering

Preparation

  1. Mix 1 cup of brown rice puffs or other cereal, 1/2 cup coconut, and a large handful of dried fruit and nuts.

  2. Blend 3 squishy dates, 150g peanut butter, sea salt, and 2 tablespoons coconut oil into a paste.

  3. Stir the paste into the dried ingredients and flatten into a lined tin.

  4. Cover with melted chocolate and any toppings.

  5. Leave in the fridge for 1 hour to set before slicing.
