Quarantine Edition Superfood Energy Balls

Ingredients

  • 3/4 cup dessicated coconut
  • 1/3 cup coconut flour
  • 3 tbsp peanut butter
  • 2 tbsp maple syrup
  • 3 – 4 tbsp coconut oil
  • 2 pitted dates, soaked
  • Pinch of sea salt
  • 1 tsp green spirulina powder

Preparation

  1. Place all ingredients into a food processor and mix until it becomes sticky and starts to form a ball.

  2. Take dough from food processor and form 1 inch balls.

  3. Roll the balls into the remaining coconut to coat them.

  4. Serve immediately or refrigerate in an airtight container for up to 5 days.

  5. Voila! You’ve got a nutritiously delicious power bar ready for snack time.
