Coconut Lentil Red Curry
Ingredients
- 1 cup green lentils, rinsed and drained
- 1 can reduced fat coconut milk
- 1 can diced tomatoes
- 1 tbsp soy sauce
- 1 tbsp maple syrup
- 1/2 red onion, diced
- 5 button mushrooms, sliced
- 1 medium carrot, chopped
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1 inch fresh ginger, minced
- 2 cups water ?
Preparation
In a large pot, sauté onions and mushrooms until onions are softened, about 3 minutes
Add in carrots, bell pepper, garlic, ginger and curry paste, sautéing until fragrant
Add in remaining ingredients and bring to a quick boil
Reduce heat to a simmer and cover with a lid
Simmer curry for 30 minutes or until lentils are fully cooked and curry thickens
Serve as desired
