Coconut Lentil Red Curry with Brown Rice and Avocado

Ingredients

  • 1 cup green lentils rinsed and drained - 2 tbs Thai red curry paste (vegan)
  • - 1 can coconut milk
  • - 1 can diced tomato
  • - 1 tbs soy sauce
  • - 1 tbs maple syrup - 1 red onion diced - 5 button mushrooms slice
  • - 1 medium carrot chopped - 1 red capsicum diced - 2 cloves garlic
  • - 1 inch fresh ginger minced - 2 cups water

Preparation

  1. Sauté onions, mushrooms, until onions are softened

  2. Add carrots, capsicum, garlic, ginger and curry paste until fragrant

  3. Add remaining ingredients and bring to boil

  4. Reduce to simmer until thickened

  5. Serve with brown rice and avocado
