Coconut Lentil Red Curry

Ingredients

  • 1 cup green lentils, rinsed and drained
  • 1 can reduced fat coconut milk
  • 1 can diced tomatoes
  • 1 tbsp soy sauce
  • 1 tbsp maple syrup
  • 1/2 red onion, diced
  • 5 button mushrooms, sliced
  • 1 medium carrot, chopped
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, minced
  • 2 cups water ?

Preparation

  1. In a large pot, sauté onions and mushrooms until onions are softened, about 3 minutes

  2. Add in carrots, bell pepper, garlic, ginger and curry paste, sautéing until fragrant

  3. Add in remaining ingredients and bring to a quick boil

  4. Reduce heat to a simmer and cover with a lid

  5. Simmer curry for 30 minutes or until lentils are fully cooked and curry thickens

  6. Serve as desired
