Crispy Potato and Green Beans

Ingredients

  • 150 g cut lengthwise
  • Onions: 2
  • Ginger: 1T grated
  • Olive oil: 2 T
  • Mustard seeds: 1t
  • Asafoetida: 1t
  • Cornflour or arrowroot powder: 2T
  • For marinade
  • Turmeric: 2 t
  • Curry powder: 2 T
  • Chinese 5 spice: 2t
  • Xylitol or sugar: 1 T
  • Coconut cream: 1T
  • Chilly powder: 2t (optional)
  • Salt: 2t
  • Olive oil:2T

Preparation

  1. Mix all the marinade ingredients in a bowl

  2. Add potatoes to the bowl and mix to coat well

  3. Add 1/2 t cornflour and toss to coat

  4. Tip potatoes in a greased baking tray and roast at 180 c for 30-40 mins till crunchy

  5. Add beans to the same bowl and toss in the left over marinade

  6. Add 1/2 t of cornflour to coat

  7. Heat oil in a skillet and add mustard seeds

  8. When seeds splutter add asafoetida onion ginger and green beans

  9. Cook stirring till beans are cooked then add potatoes and season
