Spicy Roasted Cauliflower and Tofu Curry
Ingredients
- 3 shallots, finely chopped
- 1 tablespoon grated ginger
- 2 cups water
- 1 block tofu, pressed and cut into tiny pieces
- 1 small cauliflower, cut into florets
- 1/2 tablespoon olive oil
- Salt to taste
Paste
- 1/2 cup coconut cream
- 1 teaspoon turmeric
- 1 teaspoon ginger powder
- 1 teaspoon asafoetida
- 1 tablespoon cumin powder
- 3 teaspoons smoked paprika
- 2 teaspoons chili powder
- 2 tablespoons coconut yogurt
- 1 tablespoon olive oil
Marinade
- 2 tablespoons coconut yogurt
- 1 tablespoon cumin powder
- 1 teaspoon turmeric
- 1 tablespoon chili powder
- 1/2 tablespoon olive oil
- 1 tablespoon arrowroot
Preparation
Place tofu and cauliflower in a bowl and add the ingredients listed under marinade.
Transfer into a baking tray and roast for 30 minutes.
Finish under the grill for 5-10 minutes for a crispy charred texture.
Mix together the listed ingredients to make a paste.
Heat olive oil in a pan and add shallots, ginger and tofu.
When onions are translucent add the paste and cook stirring for a few minutes till oil begins to separate.
Add water bring to a simmer.
Season as desired and serve topped with cauliflower.
